Spring and autumn are the pleasant months; summer is hot, students leave, and terraces on the Place Saint-Pierre thin out. Rugby home games at the Stade Ernest-Wallon and the Piano aux Jacobins festival in early autumn are the moments the city is visibly full.

Toulouse is a pink-brick city on the Garonne with a big university, Airbus on the edge of town and a rugby team that matters more than the cathedral. It is warm, southern and unhurried, with a Spanish streak in the way it eats late and lingers. It suits people who want a city with cassoulet, space, a canal towpath and no queues.

What you can do

  1. 01See the Basilique Saint-Sernin's Romanesque nave, then the Jacobins cloister with its palm-vaulted chancel.
  2. 02Eat cassoulet at a table in the Marché Victor Hugo, upstairs at lunchtime, and follow it with nothing.
  3. 03Tour the Airbus assembly line or the Aeroscopia museum at Blagnac, with two Concordes; book ahead.
  4. 04Walk or cycle the Canal du Midi towpath east from Port Saint-Sauveur under the plane trees.
  5. 05Take a beer at the Place Saint-Pierre at dusk, then cross the Pont Neuf to the Prairie des Filtres.

Capitole and the old centreThe main square, shopping streets, Saint-Sernin; central and lively, the obvious base.
CarmesNarrow streets, a small covered market and mansion courtyards south of the centre; quieter, well-heeled.
Saint-CyprienAcross the river, a former working quarter with the Abattoirs art museum; cheaper, local.
Saint-Aubin and Jean-JaurèsA Sunday market at Saint-Aubin, bars, a young crowd; close to the station.

Stay in the centre between the Capitole and the Carmes; the streets around Matabiau station are convenient but charmless.
