The place

Toulouse is a pink-brick city on the Garonne with a big university, Airbus on the edge of town and a rugby team that matters more than the cathedral. It is warm, southern and unhurried, with a Spanish streak in the way it eats late and lingers. It suits people who want a city with cassoulet, space, a canal towpath and no queues.
What you can do
- 01See the Basilique Saint-Sernin's Romanesque nave, then the Jacobins cloister with its palm-vaulted chancel.
- 02Eat cassoulet at a table in the Marché Victor Hugo, upstairs at lunchtime, and follow it with nothing.
- 03Tour the Airbus assembly line or the Aeroscopia museum at Blagnac, with two Concordes; book ahead.

Stay in the centre between the Capitole and the Carmes; the streets around Matabiau station are convenient but charmless.
