Balloons fly only when the aviation authority clears the wind, and cancellations are common, so arrive with two or three mornings to spare. Spring and autumn have the steadiest flying weather and walkable temperatures; winter is cold, sometimes snowed in, and much emptier.
Best months here: June, September, October. Daytime highs, sea temperature and rainy days from three years of Open-Meteo reanalysis; a rainy day is one with at least 1 mm of rain, which is the WMO threshold and not the same as "it drizzled".
The place

Cappadocia is a plateau of soft volcanic tuff carved into churches, dovecotes and hotels, where the morning starts with a hundred balloons over Göreme and ends with the same view from a cave terrace. It is genuinely strange and genuinely commercial at once; the valleys between the villages are where the strangeness wins.
What you can do
- 01Walk Rose Valley to Çavuşin in the late afternoon, past frescoed churches cut into the pink rock.
- 02See the Göreme Open-Air Museum at opening time; the Dark Church costs extra and is worth it.
- 03Go underground at Derinkuyu or Kaymaklı, eight levels of tunnels dug for whole towns to hide in.
- 04Order testi kebab, a stew sealed in a clay pot and broken open at the table, in Avanos or Ürgüp.
- 05Watch the balloons lift from a ridge above Göreme at dawn even if you are not flying.
Where to stay · neighbourhoods
Sleep in a cave hotel in Uçhisar or Ürgüp for quiet and views, in Göreme for convenience and the balloon view at breakfast. Check that a cave room has a window; some do not.
Unusual things
- ◦Soğanlı Valley, an hour south, with rock churches, pigeon houses and almost nobody, where village women sell cloth dolls.
- ◦Mustafapaşa, the old Greek town of Sinasos, with carved stone mansions and a church still holding its iconostasis.
- ◦Keşlik Monastery near Cemil, a complex of soot-blackened chapels and a refectory carved from a single outcrop.
